This buckwheat banana bread uses nutty  whole-grain buckwheat flour, which provides extra fiber and protein without sacrificing flavor.

STEP 1 Whisk melted butter, brown and white sugars, and eggs in a mixing bowl.

STEP 2 Mash in overripe bananas and  mix well to combine.

STEP 3 Whisk sour cream and vanilla  into the banana mixture.

STEP 4 Add all of the dry ingredients  to the bowl.

STEP 5 Fold together until no  dry bits of flour remain in the bowl.

STEP 6 Spoon the batter into a buttered  loaf tin and smooth the top.

STEP 6 Bake for 50 to 55 minutes then transfer to a wire rack to cool completely.
