Chicken Florentine soup is a creamy and hearty dish made with rotisserie chicken, baby spinach, gnocchi, and lots of Parmesan cheese! It's the perfect comfort food for cold days.

STEP 1 Cook diced carrots, celery, and onion  in butter until slightly softened.

STEP 2 Add chicken stock and salt. Boil, then simmer until vegetables are tender.

STEP 3 Add cream and stir. Add baby spinach and let it wilt into the soup.

STEP 4 Stir in chicken, gnocchi, lemon zest, black pepper, and Parmesan cheese.

STEP 5 Simmer for five minutes, then serve hot, with more Parmesan cheese.
