Chicken Florentine soup is a creamy, delicious, hearty dish made with rotisserie chicken, baby spinach, gnocchi, and lots of Parmesan cheese! It's the perfect comfort food for cold days.

Cook carrots, celery, and  onion in butter until  slightly softened.

Add chicken stock and salt. Bring to a boil, reduce the heat, and cook for 8 to 9 minutes, or until the vegetables are soft.

Add half-and-half cream and simmer for five minutes. Add baby spinach and let it wilt into the hot soup.

Stir in chicken, gnocchi,  pepper, lemon zest, and cheese. Simmer for five  minutes then serve!
