STEP 1 Peel and slice the red onion as thin as you can. I like to use a mandolin.

STEP 2 Whisk apple cider vinegar, sugar, and salt with boiling water.

STEP 3 Lightly pack the onions in a jar and pour in the vinegar mixture.

STEP 4 The onions must be submerged. If not quite, press down gently with a spoon.

STEP 5 Cool completely, seal, and store in the fridge. Serve with anything you like!
