Indulge in the rich, creamy taste of homemade pistachio ice cream. Made with real pistachios, its distinct flavor sets it apart from  any other  ice cream flavor.

STEP 1 Heat cream on the stovetop. Add  sugar and egg yolks to a mixing bowl.

STEP 2 Dribble ½ cup of hot cream, whisking constantly, into whisked egg yolks.

STEP 3 Add tempered yolks to hot cream and cook to 170ºF and 175ºF (77ºC to 79ºC).

STEP 4 Strain through a fine mesh sieve  into a bowl or container.

STEP 5 Whisk in malt powder (if using), pistachio emulsion, and salt.

STEP 6 Press plastic wrap gently on top of  the custard. Refrigerate overnight.

STEP 7 Churn custard in an ice cream maker. Add pistachios near the end.

STEP 8 Eat immediately (soft serve) or  freeze to scoop and serve later.
