Measure 35% whipping cream and then pour it into a clean glass jar.
Add buttermilk to the whipping cream in the jar.
Place a lid tightly on the jar and shake well to combine. Remove the lid.
Place a square of paper towel over the top and secure with a rubber band.
Rest at room temperature for 24 hours. Remove rubber band and paper towel.
Stir well, seal, and store in the fridge where it will continue to thicken.
