STEP 1 Cream butter and sugar  until light and fluffy.

STEP 2 Add flour and salt and mix on low  until coarse and crumbly.

STEP 3 Press the crumbs into a firm,  even layer of crust.

STEP 4 Bake the crust until the edges are golden. Transfer to a rack.

STEP 5 Mix the lemon filling ingredients then mix in all-purpose flour for thickening.

STEP 6 Pour the lemon filling over the crust and bake until the filling is set.
