These homemade lobster cakes put  a twist on classic fish cakes, blending rich lobster with buttery crumbs, lemon zest,  fresh basil, and a  hint of Old Bay.

STEP 1 Pulse the crackers in a small  food processor to fine crumbs.

STEP 2 Whisk all of the wet ingredients  and herbs together.

STEP 3 Gently fold in fresh lobster meat until well coated in the wet mixture.

STEP 4 Stir in the cracker crumbs  until no dry crumbs remain.

STEP 5 Gently form the mixture into eight small patties. Dip each patty in flour.

STEP 6 Fry each patty in butter in a  hot skillet until golden and crispy.
