Sear fresh scallops in  the hot bacon fat. Set aside.

Add water, potatoes, carrots, and salt. Bring to a boil, reduce the heat, and simmer until the vegetables are tender.

Add 35% cream and simmer for 10 minutes. Add the seafood and simmer for 5.

Add the cooked bacon bits, plus chives, dill, salt, and pepper to the pot.

Ladle into bowls and top with the pan-seared scallops. Serve with more fresh dill.
