Whipped Brown Butter Spread With Cardamom And Vanilla is terrific on toast, bagels, scones, waffles, or anywhere else you use cinnamon sugar butter. The recipe method calls for the butter to be browned in the microwave, however, you can also use a large pot on the stove.
- 200 g butter room temperature, divided in half
- 1 vanilla bean seeds scraped
- 3 tablespoons organic cane sugar
- 2 teaspoons ground cardamom
Place 100g of butter in a TALL heatproof microwave-safe dish. Microwave the butter in one minute intervals until fragrant and deep amber in colour, about 4 minutes. Set aside and cool.
Whip remaining 100g butter, seeds from vanilla bean, sugar, and cardamom until light and fluffy. Add cooled browned butter and continue to mix until well combined.
It's important to use a tall vessel for browning your butter in the microwave because it will become foamy and rise up quite high.
The butter WILL splatter while browning in the microwave, so if you have a microwave-safe splatter screen please use it.
Add cardamom in 1/2 tsp amounts until you are happy with the taste. Two teaspoons was a perfect balance for me!
As the brown butter spread sits, the sugar will dissolve, however, I love the crunch of the sugar crystals when first mixed!
