Lilac Sugar

Lilac sugar adds a soft, gentle floral note to your baking and desserts. Use it anywhere you would use regular sugar.

  • 1 cup sugar
  • ½ cup lilac blossoms removed from stem, gently shaken to loosen dirt or insects


  • Combine sugar and lilac blossoms in a jar. Seal the lid and give the jar a shake. Shake once per day for a week or so.
  • Using a fine mesh strainer, sift the lilac blossoms out of the sugar. Store your sugar in a jar and use anywhere you would use regular sugar.


The moisture in the flowers will make the sugar clump during the week. Don't worry, just continue to shake every day to infuse the lilac flavour.
