Cook the pasta in well-salted water according to package directions. Drain and rinse under cold water until cool. Drain again and set aside.
In a large bowl, whisk together the sesame oil, soya sauce, peanut butter, minced garlic and ginger, and lime juice until smooth and emulsified. Add the cooled drained pasta to the bowl and stir well to coat.
Add any protein, vegetables, or garnishes you like or have on hand (see recipe notes). Serve the peanut noodles warm or cold, as a side dish or as a meal.
